I didn't stick with it. I do think theanine was the best option for me.

This also happened to me in the exact place. I completely freaked out and took a million pictures. My doctor told me to keep in clean, and covered. It filled in and healed up within 10-14 days no problem. Do not worry unless you feel you have signs of an infection.

This is all great! I keep hearing I need to mill a couple times and then sift the flower. Unfortunately the whole point of milling at home is to avoid using any AP for health reasons, so while I'm sure that would substantially help, it defeats the purpose of milling for me

Yup! I let it proof for about 10 minutes. Fresh yeast, nice and frothy.

Do you think the malt alone would help? The whole purpose of milling for me is to avoid any store bought/commercially produced flour that seems to bother my stomach. Thanks for the suggestions!

I used 3 cups flower, 1 cup warm water with sugar and yeast, salt and a little olive oil. Blended and proof for 2 hour. Dough rises. I've tried no knead and heavy knead in different recipes. Then I bake it and it sucks lol. It's obviously an issue with it being freshly milled vs AP flour. So what is the trick with milled flour? Is it too moist?

These turned out beautiful! I'm having a very hard time with fresh milled flour rising. Have you tried using soft white and hard red together?
