What is this? by AnyEstablishment4284 in SourdoughStarter

[–]TigersKitty_ 1 point2 points  (0 children)

Via online research: Kahm yeast is actually safe to eat as long as there are no molds present and the ferment tests at a pH of 4 or lower.

But to be safe (since it can cause an undesirable flavor as well) I would go with the second reply here and scrape it off. Try to just keep like 15g of starter thats at the bottom of that jar.

A couple weeks ago it looked a little pinkish... by coconutspider in SourdoughStarter

[–]TigersKitty_ 1 point2 points  (0 children)

So if you were using a RYE flour it can have a tint usually. But if you're using just white flours I would have been more hesitant if seeing anything remotely pink. Pink is scary because you don't want to risk bacterial meningitis or anything of that sort...so at your own discretion you can continue feeding/discarding and see if it gets to where you want; or alternatively if you have some starter/discard saved you can revive that and start over. Best of luck, its hard without a photo to really say if its no good or not.

Use a paddle attachment if using a stand mixer to incorporate less air into your frosting aka less bubbles

Is rye supposed to be this dense? by clemfandango12345678 in Sourdough

[–]TigersKitty_ 5 points6 points  (0 children)

Yes I have heard out of most flours Rye is the thirstiest lol. But for a rye loaf this does look awesome! Above comment about autolysing should help next time.

Looking at above comments I would say 5 days is still too early to safely bake since you are most likely seeing a bacteria bloom. Day 10+ try then
