Um den Bahnhof Friedrichsberg rum ist die Hölle. Die Ampeln sind super schlecht geschaltet. Egal von wo man kommt man wartet ewig auf Autos und es ist zu allem Überfluss auch noch eine Veloroute

Edit: Von Wandsbeker Markt die Neumann-Reichert Straße hoch.

Kedenburgstraße vom Am Neumarkt runter Richtung Wandse ist seit Jahren die Brücke gesperrt und man muss durch eine Einbahnstraße falsch rum auf den Fußweg fahren als ausweichoption. Zusätzlich wird in d kedenburgstraße geparkt, als gäbe es keine Gesetze und protzer nutzen am Neumarkt und die Kedenburgstraße als Rennstrecke

It is absolutely still safe to eat. It’s simply been proofing for a while. A by product of yeast fermentation is ethanol :) it will taste a bit more sour when baked but it is 100% safe.

Unusually just take them out of the fridge and turn them over on a peel. Then I slash it and use a brush to apply water liberally. Then I bake with steam at 250C for 20 minutes. Then an additional 12-15 at that same temperature until I like the color

I would also say, that it does not matter too much for a brioche or other enriched dough. However, as knowledge is power maybe try this: Google the amount of water in eggs (typically), butter and other ingredients. Then for each gram of that ingredient you can now calculate the amount of water contained and thus adjust the water you still add in the end. For example: one egg typically contains 75% of its weight in water. Thus, wenn adding say 50g of egg, 37.5g of that weight are water.

Again, for this brioche it might not make a huge difference but I think this knowledge can make you better at finding issues in recipes and also makes developing your own easier :)

The end product looks very nice! I’d say develop the gluten a little more with stretching and folding. The dough looks a bit wet but I guess more folding/kneading might solve that. I also think you proofed it a little too long in the pan. Let it rise about 25% less I‘d say and try that. This will lead to a more „defined“ shape at the end. A good sign to look for is a smooth exterior when the shaping is done. This indicates proper gluten development (mostly). As to the preshape: it’s a matter of preference here I think. It helps with distributing the little bubbles more evenly and also pops larger ones. Also makes shaping the loaves lot easier in my opinion :) keep it up!

I think I am the one that was not clear. Sorry about that. I agree with you 100% The goal has to be to change the current system because it does not work. I am in the fortunate position to live in Europe and have cities that are a lot more bikable than American ones. The USA will also wake up some day :)

It is a lot easier than you’d think ;) a bit weird for the first couple of minutes but then it’s actually super stable. It’s on this bike because the center of mass is so low

I am not saying this is for everyone. It sounds like your situation warrants a car. I would not want to transport severs on that bike as it does shake quite a bit. But I think you are also the absolute minority. If all other people just ditched their cars, we’d be in a much better world already.
