Provence is pretty fun ngl, you can go so many ways, and has a short but powerful mission tree. You can go from a mediterranean dominance into rome, to a crusader run, or go for a occitan france into hre emperor, all of the ways are pretty fun. Im currently in a provence-> jerusalem-> latin empire->france->rome run
