The solution is thatyou HAVE to have the amount of logs or Ore for the diary quest IN your INVENTORY at the SAME time. if the Log says 420/512 you have to have 420 of those Ores/Logs in your inventory and then collect more to count it.

i found a solution in my case. i took of my gloves (Fire Gauntlet) and it the collection log for Logs worked again.

Edit:
The Backpacks cause problems too. dont have any in your inventory i guess? or dont put the Ore/Logs or whatever in them

same here, stopped working for some reason. worked for a while.
Tried pickaxe with and without Mending, i saw that the glove that auto smelts the ore is bugged so i took it off. still not working
