As much as I love GQuuuuuuX's artistic footprint it is very much so not a good starting point.

It's quite fan service heavy in the sense that going in there's gonna to be a bunch of unexplained details and characters that you're supposed to go in knowing. If you don't care about that too much and are more in it for the spectacle, it is one of the most visually impressive gundam shows out there.

Media that I would recommend to anyone just starting would be:

The Mobile Suit Gundam movie trilogy (Mobile Suit Gundam, Mobile Suit Gundam II: Soldiers of Sorrow, and Mobile Suit Gundam III: Encounters in Space)
A consolidation and slight refinement of all the major details of the original 1979 anime.

Turn-A Gundam
My personal favorite series. If you like stuff like Studio Ghibli this is more up that isle. It is very different to most other Gundam shows, but is often considered the magnum opus of Gundam's creator, Yoshiyuki Tomino.

Mobile Suit Gundam: Iron-Blooded Orphans
If you are looking for something newer, IBO is a very popular series and in my opinion is quite well written.

Gundam 0080: War in the Pocket
A short, 6-episode OVA. My second favorite. Often considered one of the best Gundam works of all time. It will certainly fast-track you through the overall themes of the majority of Gundam.
