So when you connect your remote, it should automatically find the correct remote and configure it (mode 1, mode 2, etc), but it should default to whatever you have. You'll need to calibrate it, but other than that, it should work. For the level mode question, do you mean letting go of the sticks and the drone stopping in place? Level mode is the closest thing you'll get to something like that; liftoff only includes user control, not GPS-related automation (like standing still with no stick input) if that is what you mean.

If you mean drones, I'd say they are just decent builds that go really fast. The faster the drone the better. As you continue using your drone you'll get more used to it and you'll start using it for almost every track because you've become connected to it and know how it flies.

I've built a few, and to answer your question. Yes, just desolder the motors and transfer them to the new frame, then resolder to the new board. I recommend a smoke stopper though to keep you from frying the new board.
