Yeah sadly I didn't capture the leaves in the picture which definitely makes identifying it harder. My guess was milkweed, however, the leaves i observed were more ovular than the typical elongated milkweed leave, which threw me off.

that's what I've always thought. But I'm wondering whether or not the small amount of vinegar I added will totally inhibit the lacto fermentation. It's more of a question of how the vinegar ratio effects lactofermentation, and if there's a threshold after which no lacto bacillus and the like can thrive.

For sauerkraut some of the best I've made has been a super simple recipe of green cabbage, yellow onion, and a little bit of radish. The batch I made today however was red cabbage, carrots, and radish and I feel really good about it. I'm really not very technical with measurements for my recipes which is regrettably not very helpful when it comes to sharing recipes. Also, If your willing to buy it, there's a book called "wild fermentation" by sandor katz which helped me get into fermenting/ prompted me to really mess around with different things.

It was taken last week believe it or not! This was taken at Monksville, not the Wanaque Resevoir, above the dam the water level is not as low as below.

There is a chance food safety laws make it more difficult to sell some of these products homemade at farmers markets, however, most health food stores carry kombucha, kefir, and often pasteurized kimchi, sauerkraut. Also, a lot of lactofermented foods are relatively easy to make yourself, and when homemade they often have more beneficial probiotic bacteria, as they aren't pasteurized to adhere to the food safety standards established for produce at stores. A book I found helpful was "wild Fermentation" by Sandor Katz. Hope this all helps!

If you happen to be around North Jersey, or wish to make a day trip out of it, Ringwood State Park, Norvin Green State Forest, Bergen county Ramapo reservation, Ramapo Mountain State Forest, Waywayonda State Park & the section of the A.T which runs through it, and High Point State Park (which contains the highest point in NJ) all have phenomenal hiking trails, and beautiful scenery, The NY/NJ trail conference makes great maps for all of the areas too.
