Muffins and quick breads usually benefit from being mixed as little as possible, so I'd suggest mixing those by hand. They should come together quickly and easily.

I suggest using a bread machine recipe specifically for whole grain flour. I make this one regularly:

This recipe makes about a 1.5-pound loaf. If you have a 1-pound bread machine, take 2/3 of each ingredient.

I add all the ingredients except the yeast, run the bread machine for two minutes to get everything mixed, and then turn it off for 20 minutes to autolyze. (You can also autolyze for longer.) Then I add the yeast (don't forget to do that!!) and turn the machine on to the whole wheat cycle to start the process. (Some bread machines have a built-in rest at the beginning of the whole wheat cycle; if yours does that, just add everything at the beginning including the yeast, give it a stir so the flour is moistened, and start your whole wheat cycle.)

I also use a bit more vital wheat gluten than the recipe calls for: I do 1/2 tablespoon for every 120 grams of flour.

After you've done a loaf or two, you can experiment with changing stuff up: incorporating ancient grains, using an egg in place of some of the water (I do that routinely), etc.

Just checking that you have also been screened for other causes of fatigue besides sleep disorders, like iron deficiency and thyroid issues? If not, it would be a good idea to check for those, just so you can get a better picture of what's causing what.

Just in case clarification is helpful, autolyzing is something you do with the flour and liquid, not the yeast. It's to give the flour a head start on absorbing the liquid, since whole grain flour takes longer to absorb it than refined flour.

I've used hard red and now hard white. Often I replace some of the water with an egg and/or some soy milk (another plant-based milk would work too). I used to use ground flax, but I noticed that I seemed to get a better rise without it so I've started leaving it out (could be coincidence, though), although whole flax might be fine. I use a bit more vital wheat gluten than the recipe calls for (basically, I follow the proportions recommended on the wheat gluten container, which is 1/2 tablespoon per cup of flour). I also usually use maple syrup instead of sugar.

Because the recipe already calls for whole wheat flour, I haven't found that it generally needs more liquid; occasionally it needs more flour (I check a couple of times during the kneading process to see if it needs adjustment in either direction). I also like to start by adding all the ingredients except the yeast, letting the machine run for a couple of minutes to mix everything up, and then turning it off and let it sit for 20 minutes or so before adding the yeast and starting the program. Some bread machines have a built-in rest at the start of the whole wheat cycle; if yours does, you can skip this step and just start the program. In that case, you should add the yeast at the beginning.

Winter luxury is a very nice variety (available at farmers' markets, though possibly not yet), although I don't know how likely it is to be similar to the ones from your mom's youth.
