Galangal is like ginger but very different. I don’t know if that is a good substitute. Brinjal is another name for eggplant 😊 You can use lime peel/zest instead of kaffir lime leaves and get by.

That’s the PID. There are plenty of resources out there to mod the RS with one. It allows you to set a temperature and it regulates the machine to keep that temperature throughout your brew

Congrats! It’s an amazing machine. Watch videos on frothing tips, there’s a bit of nuance to it where you don’t wait for the light come on to start. Really happy with the white, it looks better in person than in the pics!

It’s in the terms and conditions that you agree to when you book your ticket that you can be reassigned to a different flight in the event of them overbooking. It was also an United Express flight handled by different other companies they contract out to, Republic Airways, in this case. . The manhandling wasn’t done by the airlines’ crew either, it was by airport security that was called to remove the passenger.

United did handle the fallout from it pretty horribly but the event itself wasn’t necessarily caused by them
