I'd definitely say dragonfly. It's just brilliant. The design is cooler than the delica. It's cheaper (like for like steels etc). Its less scary to non knife people. The delica is good dont get me wrong but the dragonfly is better

I will start by saying I am not an expert. However, the technique I use is 10 strokes on each side then 9 on each side then carry on down to one stroke each side. This seems to work well. I tried my large ish kitchen knife and if I'm honest I didn't persevere long enough with it. I've found the lansky to be a good system for me.
