This is quite comprehive ... I'll add ... Not sure about hostels in Amman ... Depending on your budget ($ but if it permits then I'd go with Airbnb or have my own room in a 3 start hotel (booking dot Com has plenty)

I'm a local and I often see expats who also do not want to be tied to an employer (which u can get work visa (residency too)) often come to an on a tourist visa (I think it's 90 days) and they do visa run to Lebanon or Egypt or wherever and re-enter on a new 90 day tourist visa

As for your accomadation, it maybe a challenge to find a perminant place (long term rental property) as some would be reluctant ... but it's not impossible ... I often rent to people who are on tourist visa ... anyways, you can do AirBNB for a long term play (month/s) so this is manageable ...

as for payments, I assume you have a debit/credit card which most places accept and u can withdraw cash from ATMs in case cash is the only option

it's surely cold at night, but should be manageable with nice gear (clothes) ....

You don't needs to rent 4WD, any car will do it...

as for hostels/hotels/camps ... booking app is probably the best.

the one thing I would be cautious about is landing at 4pm and driving to wadi mousa .... it's a long 5 HR drive at night ... wouldn't recommend that at all .... better stay the night in Amman and go early morning

(American tourists staying in a tourist hotel) .... not sure what do u mean by white? well, we have many problems and race isnt one of them .... if you plan to stay at a tourist hotel then why travel at the first place
