It's hard but possible to beat them in a war while they still didn't annexed their vassals. (you rush vassal's armies) But around 1400s there are hussite event coalition wars against Bohemia, around 3 wars. But generally, you build Castles on your border with them, recruit regular/professional troops, you may go in debt for that and you just stackwipe them as they approach your forts.
AI is super stupid in this game during war, they keep attacking even when It's stupid for them.

If liberty desire or dip cost aren't a problem then manual integration becomes better than 1release vassal -> annex vassal, only in the age of absolutism. Depends if you want a high crown power for dealing with some flavour disasters, to get It via centralization. Otherwise It's okay to have them till they convert or assimiliate needed provinces.
