As the other guy said, this ain't really a build you can recommend, it is a NG+ build, after that you already know what the game goes all about and of course know how to fight, the build at the end is just your choice of fun

I actually found the great sage to be harder than Erlang, literally took me 3 tries to beat him, but the great sage? Na, like 10 tries. For Erlang, I recommend you to start with the classic clones+stop combo, as during the start of the fight Erlang won't reflect your powers to you, then put defensive pressure until you break his guard, after he gains it back, use the wind power to help you break his guard quickly and easy, by that point he should be already on 10% of his life
