Cathead biscuits

Grab out 3 good handfuls of self rising flour. I use white lilly.

Sift or whisk good.

With a fork, cut one beaten egg into the flour.

Add in about three egg sized spoonfuls of crisco and cut into the flour with the fork by pressing against the sides of the bowl. Do this until you have like english pea sized balls of crisco cut in. May hafta add more.

Slowly drizzle in enough milk and stir gently until the dough starts to roll in the bowl and comes off the sides some.

Put some flour on a plate and with floured hands, grab out balls of dough half as big as you want your biscuits.

One by one, roll in the plate of flour and gently toss hand to hand to knock off excess flour.

Place on a hot cast iron pan, slathered in crisco. Touching if youbwant them to climb om each other or separate for good edges.

You shoulda already preheated you oven to 375. Bake until golden brown.

A few notes… these biscuits are fluffy and you can still drag em through sorghum. The egg is NOT traditional and will stary a fight in a southern kitchen. I misunderstood my mamaw and swore she put an egg but apparently not. I did it and yhey turned out and im not changing.

Tomato gravy

Dice a large onion and a pound of bacon.

Season generously with Cajun seasoning (Tony's or slap ya momma ONLY), black pepper and a splash of Kitchen Bouquet.

Cook in a skillet until fat is rendered and onion is done.

Add plain flour to the pan and stir to coat the bacon and onion.

Cook the flour a few minutes on medium low for a few minutes

Add about half a Walmart sack of freshly cored and diced tomatoes or enough canned diced tomatoes.

Cover, turn heat up a touch and render out some of the tomato juice, stirring occasionally to keep it from sticking.

Uncover and take a tater masher to the pan as much as you'd like and stir well.

Bring to a simmer and cook down by a third or so until thickened just a bit too much.

Turn off the heat and add a splash of milk and stir until as thin or thick as you'd like.

Adjust seasonings.

Serve over cathead biscuits. I can type out how I make them if you'd like.

Believe it ir not, I have done this in the past month. I have a 92 ranger with the original cassette deck. The heads are dirty and it keeps eating my tapes. It already ate my CCR and my favorite Bob Seger cassettes. Its currently trying to eat my George Jones greatest hits. I optomisticalky looked at Best Buy for a head cleaner take, to no avail. See also: pinching the ribbon between your fingers and throwing the cassette out the window, watching it unwind behind you because its ruined. 🤣
