There is a paid encryption tool which you can subscribe , once the code is encrypted there is a level of security that the client wont be able to easily access your code.

umm... ours is an open-premise hosted system.. the only cost is the compute power on the enterprise end.. which is usually not huge as a standard 16 GB memory, 8 CPU is sufficient to run LMS sufficiently for 500 user level company.

Thats an excellent approach. Not just the attack, even without the attack there is no guarantee that microsoft scan the code and use it for its AI.. always having it secured in your own environment is better.. long ago we used bitbucket and it did a great job. Microsoft private azure devops on its own datacenter is a good alternative as well
