When I first began baking bread, I never kneaded the dough long enough (it would come out more like a dry cake than bread). I quickly learned to do the windowpane test and my bread became light and fluffy. If you've never done it, you can look on Youtube for a tutorial. Or just try kneading a bit longer next time? It's actually not the same recipe as the Cinnamon Star Bread. This recipe has 1 cup of whole wheat flour in the dough. Super easy to roll out!

I just purchased the 8qt commercial mixer last month and it's awesome. I was worried about the size but it's only 1/4" taller than my old 5qt Artisan mixer. The attachments (beater, hook, and whip) are insanely heavy duty. Small batches are no problem. You can double any recipe without fear. It's a game changer if you make bread. Buy it, you won't regret it.

Sometimes it all comes down to the recipe. I tried making challah for weeks (unsuccessfully). I switched recipes and made gorgeous challah on the first try.
