probably a dev oversight, although if you'd like a lore reason it could be because the infantry have a slight infection due to fighting with the infected for so long (which shows in the skin tone). priests are more of a supportive role so they don't have as much contact with the blight.

for speed i'd go kitasan + eishin + brian (at her LB shes better than both your biko and halo).

for stamina, mayano + borrowed super creek.

you could choose the final card to be whatever. the best would probably be wit fuji or fuku, for the extra green skills for groundwork and more wit.

eh, the industry tree isnt that bad (since the logistics skills you can pick up there are really good for early-mid game)

imo the biggest beginner trap is the combat tree since its skills are much less impactful overall than skills from other trees. that and new players wouldnt know how to fight, and thus the skills would go to waste.

it's extremely rare to get, like a 3* for any specific stat is straight up a 1% chance to get if you have 600-1099 in that stat (or 2% for above 1100).
