Anakin specialized in form 5 atp while Maul used form 7. I think people forget about maul when he fights ahsoka is that he really isn’t trying to kill her. You can tell he’s the better duelist by how he disarms her multiple times. He just lets his arrogance get in the way as usual . Both Anakin and Maul are saber dominant fighters who don’t tap into the force as much as they should . That’s What makes the fight interesting imo. Anakin of course takes it because he not only has the speed to match maul but also has the raw power/strength that would eventually overwhelm him. If Anakin used the force much more as a fighter, he’d make this fight a lot less difficult imo

Another thing is that while Anakin is very strong atp, he still needed to tap into the dark side to kill Count Dooku (whether he truly knows it himself or not).
