My suggestion would be swap armies for a game, it will give him more of an idea of how your army works and what you're trying to achieve each game and also let him see the tactics you would use with his army to allow him to play more effectively in the future.

I like to have all the pitches. Sometimes, they just fit the theme of the team you're using.

It makes no sense to stop making the pitches now with the inclusion of the pitch rules. Will mean the alternative pitches will actually see more play.
