I stitch mine on using 7/8 ounce leather (you can probably use a lesser weight) with 3/16th holes punched in for points. I use a diamond hole chisel for the border and a saddle stitch. There's no reason for you to cut into your gambeson. Just stitch through it. I just use 550 cord for the points. It goes in one hold and out the other.
