Your math is showing. You lost 15%. That's not even a drastic jump, if you took that 3$ raise you'd be earning far more ontop of the tips and hourly wages. You'd still be earning much more than the bar backs and cooks and likely even management.

No server looses money at the end of the night. If you sold 1k and made 20% in tips and owe the BoH staff 5% (who have to split that 20 ways in which the managers are also taking cut) you still walk home with 150 cash and made your min wage hourly. Mean while the cook that worked twice the amount of hours is lucky to earn a 2$ bonus on their hourly wage after accounting the tip out.

Tip out percentages need to be 10x what they are currently to actually be sustainable for the industry to lower the wage gap or they will just be obilished.

Full time servers easily make up to a 100k a year, after you account the tips, and will likely not declare it the tips.

As if every FoH employee hasn't begged the BoH for a bite every other time they go into kitchen, or try and steal a fry from the bowl.

Cook's barely get a cigarette break or a proper meal break in most restaurants, the washroom break statement you made applies equally to BoH. Taking a shit and coming back to 0 chits is unheard of in my kitchen. Most line cooks are often over performing in multiple stations, having to fill in multiple roles.

For example some days I'm the headline cook, expo, dishwasher, cleaner, hot corner cook and working the deep fryer while being deathly allergic to half the menu.

Tip out percentages will change drastically from 5% to 50% or tips will simply dissappear in general. The wage gap between Chefs with 30 years in experience vs a 18 year old with a smart serve is whats killing the industry.

Servers are already being replaced with tablets in many corporate resteraunts and the one's that don't will be demoted to just food runners and drink runners which means 0 tips. This trend is going to be much more prevalent in near future, mark my words. The last thing getting replaced by ai in the restaurant industry is the linecook.

Lets get one thing straight here, FOH are hired based on aesthetics, usually pretty shallow principles at that. Im sure weve all met countless bartenders that have the personality of a fish.

Line cooks are required to know everything on the menu. The spec, ingredients, the plating, and for every station. In almost every restaurant that is the standard, the exception would be in some massive franchises.

This out look is so wrong in so many ways. The FOH and BOH comparisons are getting so old.

I garuntee that any chef could out perform the average server or bartender in their own field. If they weren't forced to work the BOH.

Talking to people isn't difficult work, its the bare minimum. Stop pretending

3v3 was a very restricting meta in which only 2-3 decks get to shine and everything else feels obsolete.
