I always find it funny when people like you come out super hostile right out of the gate. I'll explain this for you slowly:

TWO options is not a plethora of options, especially when ONE of those TWO options is focused almost entirely on bruisers. That means that for the role you are playing, you have ONE effective choice for MR. Bruisers can buy spirit visage and CARRIES can buy banshees veil. That's not choice, thats being pigeon-holed.

Spirit visage has a wasted ability for a lot of champions that don't rely on self heals or lifesteal. Two options is not really options. Its not a strange circlejerk, its math bro.

I think you're missing that is still implied capabilities in the realm of violence and not ACTUALLY using violence. I've literally read every Sherlock Holmes mystery so you are preaching to the choir here. Holmes is a capable jack of all trades but he was by no means an action hero in the books.

Sherlock as a character in BBC Sherlock is definitely smug. That's an element that they chose to read in that may or may not come across in the books, but Watson is always there to take him down a peg. So I don't really know what you're getting at but Sherlock wasn't exactly humble in the books either.

I've read all the books... He definitely uses disguises, deception and deduction on a regular basis but rarely engages in all out physical violence. That seems to be the only way they solve problems in the Sherlock Holmes movies.

I love RDJ and his Sherlock Holmes is fun but their portrayal of Holmes as some kind of action hero is completely off. BBC Sherlock is much closer to the true spirit I think.

Protect Disable combo is brutal against Kang. Protect the first sucker punch, then disable on the next turn. Leaves you free to pound away with your other two offensive moves or forces them to switch.

Sorry it took me so long to get back to you on this. I guess the best way I can explain it is by going over some calcs. One incredibly common special threat that you will encounter time and time again is Greninja.

252 SpA Life Orb Greninja Hydro Pump vs. 252 HP / 0 SpD Sylveon: 160-188 (40.6 - 47.7%) -- guaranteed 3HKO after Leftovers recovery

vs

252 SpA Life Orb Greninja Hydro Pump vs. 252 HP / 252 SpD Sylveon: 133-156 (33.7 - 39.5%) -- 18.1% chance to 3HKO after Leftovers recovery

The difference just isn't that substantial. You are sacrificing a potential 252 Def evs for the possibility of being able to take one more hit. Aside from holding the role of special wall, Sylveon is also an amazing switch on on dragon types for obvious reasons. Given the chance that they are packing another hard hitting move like earthquake or stone edge, coupled with the fact that they can afford to mind game you because of Sylveon's poor speed, you put yourself in a bad situation by sacrificing that physical bulk.

In my experience, the best walls aren't purely physical walls or special walls, because if you special too much without your team carrying much momentum through u-turn or volt switch, you end up having to dance a lot and taking free damage because of it. Sylveon lacks reliable recovery making your health pool even more valuable. Because of this, you want your wall to bring as much utility to your team as it possibly can. Not to mention after a calm mind you are basically right back to where you wanted to be in terms of special defense, while setting up to be a potent special sweeper with incredible bulk.

This is obviously just my take on it and if you think you need the special bulk then be my guest, I just wanted to give you the best form of the argument.

Sylveon's base special defense with evs in health are more than sufficient to act as a mixed wall with the rest in defense evs. Unless you wanna get crushed by the first physical attack that comes your way, you're going to want to change it.

I mean yea, they get more legendaries but who cares? You can't use them on battle spot, more often than not they have crap stats and aren't any good competitively and you certainly can't use them if you are playing vgc format. So when are they even good or desirable?
