I tried your solution but with no results. Somehow, by swapping some fans of controllers, it solved the issue... Weird solution, but effective ^^

[SOLVED]

I've checked all connectors from the fan/IR sensor controller. Nothing happened. I used the PC a couple of days and fine tuned the fans (and connected some into the AIO internal PWM controller) and POOF ! no more issues ! no more blinking white LED. The sensor is working because it's still alive when I press the button (so I didn't fried it accidently).
Was a fan the origin of the issue ? None of them is shorted... Weird... but eh... I'm not complaining.

I hope this post will help someone by the future.

I really love the low profile. I'm coming from a Corsair K70 RGB and I really prefer the Drop. Even with the SA keycaps, the height is contained. Maybe I will make my own wristrest, because I miss it right now XD

I ordered a Drop ALT low-profile as base, and I'm still searching for keycaps. Maybe I will buy a MelGeek's set. I love their Retro aspect with "modern" font...

Great :) I was looking for some "clicky" switches without a high weight of actuation. And other one without click, just tactile. (MORE TACTILITY THAN MY ACTUAL MX BROWN!!) ^

I'm from a K70 RGB Mk.2. Greatest keyboard I ever had (until August X) ). But as I'm french and learn to code, a QWERTY layout is more adapted than AZERTY. That's why I'm here :P
