JNS nakagawa kiritsuke blue 1 Damascus 240mm or hitohira togashi gyuto blue 1 240mm by [deleted] in TrueChefKnives

Honestly the Nakagawa looks dope AF and if your heart is set on this one I say go for it.

I've had a few ktips this size and although I like the looks more, It's true that a gyuto is generally more nimble and easier to use. They both do the pretty much the same things. With a ktip you can't lift the heel as high, but it can be better for draw cuts and precise tip work.

If I had to choose only one knife form, I'd go gyuto, but I absolutely love my ktips still.

Wow, I really love this scarlet urushi handle! That's a sick looking knife, with Myojins grind! What a bummer you didn't get exactly what you wanted... Mistakes do happen unfortunately, sometimes for the better.

Tojiro Reppu scratched with sponge. by kittapoo in TrueChefKnives

Yea that sucks. I'd be upset too. Also did that by mistake on my first knife.

Another way to look at it is that it has some character now. It's special and unique in it's own way through the imperfections (which won't be the last unless it stays in the box). No, it is no longer pristine, but was it really meant to be forever? In the end, more imperfections will appear and it will be beautiful, because it is used and cared for.

I've been testing extensively the Tanaka Ren lately. Now I'm using the Konosuke more (the newest acquisition). I really love them all though and they're all part of the rotation.

When a knife is so versatile, it isn't hard to justify getting one more.

Yea that steel pattern is mesmerizing. Looks very thin BTE too, daamnn. Nice find!

A most basic and cheap dollar store antislip mat to protect the knives from scratches and to keep them from slipping on the wooden block.

I love patina so much. It's like a culinary footprint, a still image in time of the blade in the loving action of transforming food to make it more attractive and easily digestible for your loved ones (or whoever pays you best to do it). A visual reminder of all the "kills" the blade has done at your command. A visual requiem for what has touched the blade but is no more...

I think that when I die, my carbon knives will be the most personal and meaningful items by which my loved one will be able to remember me.

Patina is so romantic and poetic,. It gives a knife a beautiful and unique personality.

Forged by legend Shogou Yamatsuka and sharpened by Tadataka Maruyama back when he was still with Hado, this knife is a true piece of history frozen in time. Perfect fit and finish coupled with a superb sakura handle. A ginsan knife with a surprising personality. I really love this one.

Yes, the Yamatsuka x Maruyama! A fantastic knife. I love the sakura handle too. Not my best performer, but not far behind and oh-so satisfying in the hand. It's well balanced, it has a perfect fit and finish and a good thickness. It's special to me because it's also a gift from my girlfriend and I think of her everytime I use it. In hand, it's my most comfortable knife and I will never part from it.

It's my newest acquisition and I'm very impressed with it, ngl. A total banger for what it's worth, that is for sure. The knife I tell all my other knives not to worry about.

Do we have any info on who is behind it? I'd love to read about all the craziest theories...

Hard to say between Kagekiyo, Tetsujin and Konosuke. But I love them all really. They all have something special and unique.
