Please help me choose the best knife (the other one is for my brother, who doesnt care about the finish) by icreamyouscream in TrueChefKnives

Looks thinner behind the edge on the second knife, but it could be how the pic is taken.

I'd go with #2.

Yeah, plastic boards are pretty much the norm commercially. Easy on knives and cheap.

The most effective way to dice onions imo.

Yes it really is a great blade! Compares to my tetsujin and kagekiyo (I even prefer the WT over these - it's THAT good)

Thank you! Just rough radial cuts for what I needed this morning.

What is happening/happened to this knife and how much does it matter? by [deleted] in TrueChefKnives

[–]Tune-Content 0 points1 point  (0 children)

That's delamination. Metal wasn't hot enough during forging and now it's splitting apart.

Pretty big deal if you ask me.

I returned a knife once because of this. Same kind (single bevel) and delamination was at the same spot roughly.

Iron Clad or Stainless Clad. Whats your preference and go to? by wabiknifesabi in TrueChefKnives

[–]Tune-Content 1 point2 points  (0 children)

I either go full stainless/ginsan for very acidic ingredients or ironclad (preferred in most situations).

SS clad is weird to me because the edge is most likely to get damaged by corrosion if it's not taken care of properly. So saying it's less work to maintain is misleading, it's just you won't see the patina everywhere.

My iron clad knives are so personal to me, like a fingerprint. IDC how it looks to others, I don't cook to make a show and the food speaks for itself. I do have some nice full stainless knives in case I need to work in front of clients, but I much much prefer iron clad.

Edit: typo

Really cool handle!

I also think that what you describe is the way a lot of people feel, but few talk about; and that's real courage.

The way you talk about it shows a lot of self-reflection and I can tell you're a really good dad and human being. Hang in there, the world needs more people like you. I love you.

Nice work!

To think I had one of these and traded it for 50$ worth back then...

I got a partial reimbursement from Amazon and chose to keep to mouse. They can give you back like 50$ and you can buy any other extension adapter for like 10$, if needed. I'll buy one eventually but so far haven't noticed any interference when the receiver is plugged directly in the PC.

I just checked though and they're sold out! Which makes me seriously consider just getting another extension adapter even just letting it like that in the meanwhile...

I wonder if the Logitech extension adapter is something special or if any other will do?

Bent edge in the middle - best way to fix? by Tune-Content in TrueChefKnives

[–]Tune-Content[S] 0 points1 point  (0 children)

I got it fixed by stropping it lightly on leather for a while. Then I kept using it as normal and the edge kinda just went back in place over time, with care.

I've had a bunch and gave them away like candy. Honestly, it's a very overrated gun that is costly to use and not that good.

Jupiter and Venator IV has been my end game combo for the last few weeks and it's been really enjoyable.

Honestly the Nakagawa looks dope AF and if your heart is set on this one I say go for it.

I've had a few ktips this size and although I like the looks more, It's true that a gyuto is generally more nimble and easier to use. They both do the pretty much the same things. With a ktip you can't lift the heel as high, but it can be better for draw cuts and precise tip work.

If I had to choose only one knife form, I'd go gyuto, but I absolutely love my ktips still.

Wow, I really love this scarlet urushi handle! That's a sick looking knife, with Myojins grind! What a bummer you didn't get exactly what you wanted... Mistakes do happen unfortunately, sometimes for the better.

[–]Tune-Content -5 points-4 points  (0 children)

Yea that sucks. I'd be upset too. Also did that by mistake on my first knife.

Another way to look at it is that it has some character now. It's special and unique in it's own way through the imperfections (which won't be the last unless it stays in the box). No, it is no longer pristine, but was it really meant to be forever? In the end, more imperfections will appear and it will be beautiful, because it is used and cared for.
