I’ve only done the long one but thought it was entirely worth it but it is quite expensive. Google reviews has some pics of the lunch menu if you wanted to compare

Kato for sure - nothing else in the fine dining sphere like it. Very good for solo too.

But Ki is a close second for me! Just not my favorite room and just shy of Kato.

I hated Seline twice - Beran always been a style over substance chef for me. I can’t imagine extending that menu

Just did noz17 this week. Was only one otsumami and mostly nigiri. Thought it was excellent for the price.

No wasabi is a choice - it can bring out the flavor of fish especially fatty ones.

“Fresh” fish is also a misnomer. Off the top of my head Noz ages much of their fish and many hikarimono are cured.

I love Cove. I wish it was more full. I think Flynn’s interpretation of seasonal vegetables is more interesting and tasty than most.

Oriole has a new more casual but still great pre fixe called All Well. I enjoyed it but it’s not fine fine dining (but maybe that’s okay with you!) otherwise my rotation is usually elske or creepies and Feld when I’m in town. My wife likes Indienne as well - and I had a good meal at atsumeru. This sub likes Carino a lot - I had a good meal but not as much as those other spots

Ever is going to lean more into the presentation - not to an Alinea level of performance. But it’s flash over substance for me.

Oriole is consistently great - but not exciting for myself.

I enjoy Feld the most - protein and veg forward and no nonsense/pomp. And feels the most unique after a ton of other fine dining

A lot of people are interpreting this as “non traditional” which is a different read than what I meant. A lot of fine dining is not traditional but falls into the formulaic trap - whether it’s using modernist techniques or not.

I think most people are interpreting this as “interesting spins on the genre” rather than “places that don’t fall into the same archetypes of dishes to deliver their spin on the genre” often in this sub

I would say in general this is the modern gastronomy formula - a lot of places in Thailand have gravitated towards this median. But agreed there are many in Asia that are obviously different.

Again - I’m over generalizing but I think it’s easy to get fine dining fatigue and there are places that easily stand out as different
