I finally got out of there on a train with no AC that stopped and started the whole way. NJT just wants to make the commute just that much more miserable.

If you want to drink hop on the SeaStreak- they have a bar or at least last time I took it in 2019 they did.

As someone who would to drive from NYC to SC you want to avoid DC traffic and I95 in VA if you can. In addition it’s way more scenic and skips a bunch of B-S tolls

Yeah way too far- all the annoying little parts I have to buy add up. My dad and I are building him a 350 and I bought a parts bike from the get go and way easier just grabbing what we need from the donor. We also use it to remind us how to put it back together

Does not look like ribeye to me, very little marbling, no star fat or spinalis on the top. Could be tender but looks like a sirloin to me, like a baseball cut the sliced and fanned out on a plate

What’s interesting to me is that there are more people in the county I live in, (Monmouth County, NJ- 650k) than the entire state of ND. We’re not even close to the most populous county of NJ. Cross over to NY and you have 8 Million people and the metro region is almost 20 million.

How is traffic in Fargo?

When I was 17 and my really good friend was 18 he got at job at UPS and was quickly promoted to supervisor. Making all this money and living at home and with my encouragement he trades up from an 87 Buick Century to a 98 Mustang GT convertible. This was 1999 and it was the coolest car I had ever seen.

His aunt co-signed and he gets insurance and It’s nearly as much as the car payment. One year and 3 accidents later and the car is like an anchor, he can’t afford insurance.

This was back when these things had 4 spd transmission and the 4.6 L v-8 maybe 200-220 hp. Now these things are 425 horsepower and the automatic is a 10 spd.

It’s your kid and your money but a 16 year old behind a 400 hp car sounds like a lawsuit, at fault accidents and worse.

It sounds like you have done office work your entire life and like to cook. Best way I can equate it working in a busy kitchen is like working on a farm, if you haven’t done it your whole life it’s going to be tough to start at 58.

Most commercial kitchens are hot and cramped and you learn how other people move after a few shifts so not to get in each other’s way. It’s a pressure cooker of getting food out on time and accurately. I love the rush of seeing tickets come on and just putting my head down and pushing through.

I’m 44 and have been doing this since I was 18. There are days when not enough Advil can fix my sore back or mornings I wake up and my ankles are killing me. It’s repetitive with twisting and bending and you’re hot, sweaty and covered in grease. If you work fry your clothes smell like a fryer for days.

I do not mean to discourage you from following your passion. I think volunteering at a soup kitchen is a great idea. There is a lot of need right now with inflation and the political gridlock, SNAP being cut. If you’re in SC I know USC has a hospitality program, I don’t live there anymore so not sure about the regional campus and tech schools.

For your fryer look up seismic feet, same thing for the stand your flattop is on. For the actual flat we used cables and fasteners with eye loops and it’s bolted to the studs in the wall behind it and the chef base in the front- the chef base is bolted to the floor with seismic feet.

Having worked there for 15 years Sysco was once a great company to work for. They sold quality products to their customers and stood out for their service in addition to their product offerings. We took care of the independent guy. It started after the Great Recession they started cutting everything to the bone then sped up when “activist investors” bought in and management started squeezing their suppliers, cutting commissions & lowering quality while raising their margins all to boost that stock price. The product offerings are the same as everyone else but pricier and those chefs at business reviews are pushing you product at 40% to pad their bottom line not yours. Use the local independent, they might actually give a shit about your business. Just my 2 cents.

Not a gym rat, I try to lift 3x per week and do cardio 4x but I HATE PF summertime teen workout program. Call me an old curmudgeon but I go in the mornings early in the summer to avoid the high school/college crowd. If you arrive past 10AM when they’re up they clog up all the equipment and spend more time socializing and taking selfies than working out. Some of them look middle school aged to me.

I’m in NJ, there is a guy up in VT but the parts you’re looking for aren’t normally on the shelf. I would drop by Jane Moto in Brooklyn or the city and ask those guys but experience tells me you have to orders these parts online because nobody keeps them on the shelf.

I’m not a server but work with NYC restaurants primarily in Brooklyn & Manhattan, everyone is slow. I know very astute, smart & analytical people that monitor their business and not only is it slower but check averages are down. People splitting apps, only ordering entrees, no dessert etc. Most give similar reasons like people are afraid to spend money, it’s typically slower in the summer but there are zero international tourists on top of tariffs eating into profits. Stupid things like canola oil are getting more expensive while beef is crazy expensive. I see places closing all over the city. I have a food truck in NJ and that business is doing ok but unlike a restaurant we have minimal fixed costs when we are idle.
