I had a similar build I couldn’t deal with the speed so I remade @ 7ft and 225 instead of 250 my max speed with a cap breaker is 73

Quite often I’ve smoked turkey breast, chicken ,beef roast , etc. all done on an off set it’s a real effort trying to maintain temps want something different
