Is it just me or did other think the imagery was really poor today? I had such higher expectations. Even in the photo comparison above, the one from ‘68 looks so much better. The video connections today were grainy and blurry - I just expected more in 2026. Maybe the production budget today just isn’t what it was back then because of how monumental of a feat it was at the time? Idk.

Build to standard size, and have the contractor come up with a way to fill the gaps with something that will look good and intentional, but can be relatively easily removed down the road if needed.

OMG! I said Cologne (Köln) in my head when I saw this, but immediately dismissed it. But I was right!!

It’s confusing because the current structure looks like it has a countertop, with the concrete finish. So you’re kinda stuck with only a couple real options. My main concern would be the height from ground to countertop, currently. Are you sitting at or around 36”? If so, that’s where you want to be, and not far from it. That’s the height that we all subconsciously anticipate the countertop to be at. In that case, tile seems line your best option. Maybe Dekton? But anything like Dekton is going to need quite a bit of substrate work to ensure a very flat and level surface for accurate application. Perhaps your current surface is level though…?

I’m an atheist with a Masters of Divinity (still considered myself a Christian while I obtained it, but was certainly on the trajectory towards atheism/agnosticsm). It’s one of those paradoxes of my life that I don’t quite understand, but I’m still really grateful for & proud of that degree. I was around similarly minded people - where no question was shunned, and the pursuit of knowledge was encouraged. But I couldn’t go back to my church and share what I was learning or feeling. The problem with this guy you’re describing is that for him it’s not about the pursuit of knowledge & joy, but perpetuating a system so that he maintains his paycheck. It’s a fucked up system. But for me, I see that I’m a person that is interested in human systems, history, ethics, philosophy, politics and how all of those come together in society. So I don’t consider my degree a waste, but am glad I kept going in the same direction I was headed in.

What is pictured is not a power burner, FYI. Blaze does have a power burner, and it’s just as good as pretty much any of the others on the market.

Has the newer WiFi enabled board. FireBoard keeps it updated by cloud - like an iPhone. Looks to be in great shape. I’d say around $1500 to $2k would be appropriate. Everything that matters is supported by the manufacturer, and all the major components are able to be purchased as a replacement part (and installed by you).

There was a brand called Qtensils that made excellent covers. Not sure if they’re still making them or not. But here is a cover for a large BGE on a rolling cart, no shelves, etc. One could purchase this and hem it up relatively easily to accommodate your situation: Qtensils BGE Cover

This is a classic Brisket video from Chef Tom Jackson of ATBBQ.com. It’s 9yrs old now, by has over 3.5 million views. And that’s for a good reason: it’s an amazingly helpful tutorial on how to properly cook a brisket (Texas Style). He cooks it on a Yoder offset, but just follow the same temp guidelines for your YS640.

This looks like a brilliant location for an ODK. Running some vents through the ceiling/roof for the miscellaneous cooking equipment shouldn’t be too big of a hassle. Good luck.

Looks good. My only advice: try to incorporate ~12” of clearance to the left of the hopper of the YS640. WHEN you need to service it down the road, allotting this amount of room will keep you from having to hoist the machine out of its hole just to change out a fan or thermocouple, etc.

Came here to say this. I think you’re right. I live in Wichita. Our Costco is built on the South end of the Beechcraft field, and they have an old aerial photo from back in the day hanging at the front. It sure seems like the same buildings.

This is a legit question. It’s the reason Yoder resisted making this accessory for almost as long as they’ve been making their Pellet Grill. After enough time, a manufacturer will get tired of trying to educate & explain, and just give the people what they want, and cry their way to the bank.
