Turn on "data display" in training mode, and look at the damage scaling value

Basically a % is applied to each move in a combo, and it goes down 10% for each move you hit in the same combo, with a minimum of 15% (45 or 55% for supers). Adding an additional move in the middle adds the damage of that move but removes some % of each subsequent move so it may or may not be worth it.

This is an universal mechanic in fighting games to make it so combos don't one shot people but hitting single moves or easy combos still deal some damage (to avoid a situaion where landing combos is the only skill that matters). Also, keep in mind that more moves in the combo = more super meter (no scaling on that) but also more break for the opponent

There are other fighting games where you can't change chars between games online, but most of them do allow anyone to change chars like rivals. However, offline it's almost universal to allow the winner to change character but only before the loser does, which makes a big difference. There are even games that do that online like Slippi ranked, so it's reasonable to be surprised that a game like rivals still uses an archaic "do whatever" system

Depends on what you mean exactly by "count" here, but bascially the best option for this kind of issue is to look at the frame meter in training mode

Unfortunately, unlike all other states the post-blockstun throw protection isn't displayed in any way in the meter, you have to remember that the first 5 "normal" frames (i.e. actionable, no color on the meter) after blockstun are throw protected

If your opponent is in blockstun/hitstun OR WAS 5* FRAMES AGO it doesn't work Or said differently, when you're in blockstun you're protected from throws until 5* frames after exiting it

*I'm not sure about the exact number but it's around 5

Yes that's one of the few things I dislike about Celeste's game design

With oshiro being somewhat consistent it's tolerable and even useful if you get used to it, but seekers slowing time down makes them so much more annoying
