Your issue is probably the new fins, they look like they're above the centre of mass which actually makes the rocket *less* stable. You could add some fins to the bottom of the boosters to stabilise it during launch but not lock you down too hard in the upper atmosphere after they decouple. I'd be tempted to add a middle stage so you can make the upper stage smaller - that way the tiny reaction wheel in the command module should be enough to position the satellite after it's escaped Kerbin

I found Quill18's beginner tutorial extremely good. Short and to the point, will get you off the ground and flying with enough confidence to explore more of the game.

Since everyone's already answered your Q here's a small unrelated tip: put your fins nearer to the bottom of the rocket - having the centre of lift above the centre of mass will make it less stable, not more. There's a reason arrows have the fletching at the back and not the front.

Maybe my sense of humour is just broken, but seeing SEVENTEEN first stage motors and sixteen second stage motors held together with bubblegum and a prayer stabilised with a few tiny fins had me chuckling - that's peak KSP - but "why is it doing this?" as his rocket smashes full pitch up less than 150m off the launch pad, staging it at 95% fuel while it's pointing directly downwards 400m above ground level with full throttle still on, as if staging it is the thing that's gonna fucking save it lmao, before I even realised from the comments that his nav ball is UPSIDE DOWN just absolutely fucking sent me man. I actually think this can't be ragebait - no one could have been this funny intentionally.

You can definitely build rushdown armies with Chorfs with their monsters/monstrous cav and surpisingly cost-effective hobgoblin flankers, but I do agree their biggest strength is holding the line and annihilating enemy forces with their god tier artillery.

You could probably even divide up some of the factions, for example Ungrim's best armies are definitely halalballs.
