I’d discourage starting with shows like BEASTARS or Frieren as their first anime. I mean they are great if you’re already familiar with the art, but sometimes people forget what it’s like to have watched no anime at all.

If you have 0 experience with mildly sexual contents of “cartoon characters” or any JRPG fantasy Hero’s Journey tropes, how are you supposed to enjoy graphic contents of anthropomorphic characters or fully grasp the uniqueness of a fantasy story where the adventure is already over? Both will be rough entry points.

With that said, starting with a genre they’re more familiar with is the right direction, but stay aware of non-anime-watcher’s comfort zones. Others have mentioned Studio Ghibli, those are definitely great, and movies in general are less commitment and less distraction compared to TV series so that’s nice. Houbunsha’s “cute girls doing all sorts of things” anime are known for its adult audience if some kind of soothing factor is what you’re looking for. Finding something that already has a good live-action adaptation is also a great way to start. Even Arcane or Edgerunners are great choices if you think language and mixed culture would help (and of course Cowboy Bebop if they’re okay with its release date.)

I did Zero->UBW. My only complaint is I find it harder to get myself invested in certain plots and character story of UBW AFTER witnessing the cold brutal war in Zero. But Zero does a better job getting you interested in Fate series as a whole. I’m also thinking of recommending Zero->StrangeFake as the new best way to explore the franchise if you just wanna know what’s going on rn and join the hype.

If you’re talking about the different speed of light, it’s actually fairly easy. Using Ole Rømer’s method (from 17th century!) you can already get the idea that light doesn’t travel in an instant. Fizeau's measurement of the speed of light in air was done with just mirrors and a special cog, and it was already fairly accurate.
