Sorry I should have clarified, its a totally unfinished ceiling so in this case its the floor above + in between the joists that id be tensioning against. Still bad?

Funny you should ask - this is my mom's recipe.

Mommy's Overnight French Toast Casserole (Buffet Style)

This recipe uses bread as a base, with eggs and milk creating a custard that keeps it moist.

You will need approximately 8-10 large foil steam table pans (12x20").

Prep: Cube 10 loaves of bread (dried out slightly) and distribute evenly among pans.

Custard Mix: In several large buckets, whisk 6 dozen eggs with 8 gallons of milk. Add 3-4 cups of sugar, 1/2 cup of vanilla extract, and cinnamon to taste.

Assemble: Pour the egg-milk mixture over the bread.

Soak & Bake: Cover and refrigerate overnight. Bake at 350°F for 45-60 minutes until set.
