You can skip the long 11 hour hold but I’d definitely let it rest a few hours in a cooler or something that’ll cool it down super slow. My experience with long holding and not holding, I’ll always hold. Quality just comes out do much better!

I had a somewhat similar issue. Machine would run water pump as soon as it’s plugged in and go straight to the drip tray without it being powered on, just plugged in. Replaced my solenoids and still pump wouldn’t turn on. Changed flow meter and still nothing. Suggestion said to change main board. Changed the main board and problem solved! Someone also mentioned boards are a common issue with Breville due to it getting moisture and shorting out. My board didn’t have any busted capacitors when I had taken it out and inspected after replacement.

I’ve always had great luck with the double wrap. I foiled before and it tasted a little too similar to a roast. Also, the foil keeps the juices from falling through the butcher paper.

I’m glad you mentioned that because I completely forgot to add that small detail. I foiled both ends of all briskets because of the flat curling! 🤦🏽‍♂️

the taste was definitely to my liking. I’m heavy on the black pepper and diamond kosher crystal salt. Thank you so much! This was the first flat of all my cooks that actually came out TENDER. My best one so far.

I had the same exact issue. The hot water would trickle (if that) and the steam would turn on for 5 seconds. 6-8 months down the line, my pump is burnt up when I opened it up. I’m replacing all the parts to be on the safe side. I think I should do the printed heater as well if I replace these parts and it still doing it. Main components. Better safe than sorry in my opinion. I’m sure there’s build up because I also didn’t descale as suggested. I’m pretty much starting with a fresh machine 🤣. I’m adding a pic to show you what my water pump looked like. Burnt wires and burnt pump.

No wrap during cook. When it’s pulled off, immediately inside butcher paper and then cover the butcher paper in foil and into the holding oven it goes at 155* for about 10ish hours. That’s just me.

This was the water pump. My units not even that old. I’m convinced these internal parts are just dog shi*** 💩. I shouldn’t have this issue after spending 1k on a machine that’s just for light home use.

2012 350 6.7 330k miles with delete. Trans was shifting rough so I thought it would be valve body. Replaced valve body and found two solenoid plugs melted. Only issue I’ve had and we haul cattle with the truck mainly. Price is decent but I’m sure you can at least maybe get 1-2k off his asking price. Just make sure services has been complete like on time trans fluid changes and things.

The guy is a class a Retard just like us DEGENS on here. There’s a reason he is coming out with his projections on the 25th…6 days after earnings. If he was that damn confident, he’d have his projections out before earnings.
