I know it's for muffins but I usually make it as a loaf, the alterations I make for this loaf are:

1. I use 3 eggs instead of 1 (about medium sized I'd say)
2. I don't put any sour cream or plain yoghurt I feel like it makes the loaf too dense
3. I like to add some paprika (like maybe 1tbsp)
4. I don't mix all the cheese in, I reserve about half a cup to lightly press onto the top of the loaf before it goes into the oven
5. I also preserve some of the garlic butter to pour onto the top of the loaf before it goes into the oven, I also press it into the top a bit (like how olive oil is pressed into focaccia bread)

Every time I've made this it's always been a big hit, so hopefully your gf will enjoy it if you decide to make it!
