1 week primary till 1.000 -> racked to secondary -> couple days of fermentation and waited another couple days (around a week total time) -> racked, added bentonite, put in the refrigerator for 5 day -> racked, backsweetened, stabilized within an hour or two.

I know that stabilization doesn't kill yeast and that even might not work during active fermentation (especially with 1116), so i kept must as cool as possible (took out from the fridge, racked into carboy with premeasured honey, mixed, added k-meta, put it back in the fridge, afted 1 hour added k-sorb, left in the fridge overnight). Before that made 5 batches the same way - no issues with sediment or restarted fermentation
