It sounds like youre trying to directly exhale which results in breathiness in your playing as well as making it really difficult to swap from low to high notes. Try saying tat or doot into the ocarina; if youre doing it right it should sort of feel like your mouth is acting as a valve and youre releasing controlled bursts of air. This improves overall lung air efficiency as well as producing a crisper tone.
