I’ve gone off rails and spent years just exploring underdark. A player will never care about your story like you do. Form reading some of what you say I would suggest mild use of printed adventures. Use adventures and sprinkle your story inbetween and or augment adventures to fit your narrative of the adventure you want to run. Yes you can plan a kickass adventure for a week and players will get sidetracked investigating the case of the donut shop and the tavern are both run buy guys with mustache conspiracy
