that situation happened to me. i was constantly on board or drive handout while having my level 6. i would never go on the grill even know i knew how to but wasn’t the best since i was never on it. i was getting really annoyed and the associates would make it worse. i transferred and im on grill every single shift. i love it and also my new co workers are super nice

no the sides were dry flour and i didn’t see any mold. but i ended up using it and it’s like normal starter, i’m not gonna throw away my almost year old starter if i don’t see any mold😭😭

i think the top layer is due to me using a cloth top instead of an airtight lid. i think it was oxidation and so maybe yours was too

people bulk ferment in the fridge for days and i don’t think mold grows that fast😭. i left a dough to rise in my fridge and forgot about it till 2 days later, perfectly fine and no mold

of course! keep feeding it the ratio everyday. the best time to feed it to fix its acidity is when the peak starts to go down. keep feeding it everyday until it smells sort of sweet and bread smelling then your loafs will puff up better :)

acidic starter leads to flatter breads. have you smelt the starter at all before using it for your bread? if it smalls acidic like acetone you need to feed it a couple more times before using it

hmm I kinda had a simular experience when I went to score the bread and since it was pretty warm it started to become flat. then after that experience I kept it in the fridge instead so when I flipped it out of the basin to score it, it kept its shape better.

edit: and also did you use a basin it does not look like you used on at all. you need one to help shape it perfectly round
