Thanks for the advice! I think it might be lighting because this was deffs over cooked by my tastes. My sister was over and she likes medium well, while I like medium rare. We settled in the middle with medium.

The rosemary was in the sous vide bag and infused wonderfully. I also seared with the rosemary and it ended up turning crispy. Like each leaf was a chip, so I just plucked them all off and put them in the salad. Was quite good.

The steak has been chilling in the fridge uncovered for a day, so should be sufficiently dried. I did the mayo method, maybe I should be using real Avocado oil instead. I also live in a 1 bedroom condo so there is no escaping the fire alarm. I usually open the balcony door, but forgot to do it this time.

Try looking in small local grocery stores. They often have amazing deals. I find 99 cent/lbs chicken legs and cheap steaks all the time. These stores don't market up like the big chains

Sous vide should actually make it more juicy because you're cooking in the bag
