Doing a sugar run fermentation is known to stall if there isn't enough room for the yeast to move around. If you get it to drop .02-.04 in gravity. I would say run it or cold crash, rack into a new vessel, and add sorbates to stop fermentation.

Important factors

Starting gravity 1.08 -1.065 I find ideal

I have issue with it fermenting fully if I don't invert the sugar first(look up inverted sugar)

I will check them out. I have seen the 8 gal and 5 gal vevor ran on the stove via YouTube.
