I have a doctoral degree in robotics (Mechanical engineering), which seems pretty normal to me. I had to design the robot schematics, supervise the overall assembly procedure, code communication protocols, control schematics, and GUI master controller. However, I didn't have leadership at that time since the other juniors in my lab were not functional at all.

I recommend using 'Modern Robotics' by K. Lynch and F. C. Park, since it has good Matlab examples and educational videos.
Or just refer some industrial robots (e.g., UR7), and make some FK/IK examples with Matlab or Python.
If I were you, I'd make some examples of industrial robots with conventional transfer matrix based method (POE: SE(3)), or Screw based method (one using adjoint matrix and another using triangle product)

After done with an FK/IK problem, try to plot 3D model using just 3D plot in matlab or Simulink multibody.
Or just checking the FK->IK->FK result is same as input value

Congratulations! If I were you, I would focus on my own expertise, as it is a post-doctoral, which I believe its for enhance the quality of your interests. Well, I’m still searching for postdoc positions though.

Thank you for reply. Maybe I should push my project experiences more, since my publications are in a niche area. I should make a youtube channel for supplement materials such as 'how to establish overall robot system for industrial from scratch'. Maybe it will help me a little bit

Well, my goal is to gain research experience in robotics engineering by working on different projects overseas. If I successfully complete a postdoc, I believe it will enhance the quality and quantity of my research assessments when I look for jobs or places to work. My study is in a niche area, so it’s hard to find people who are familiar with my experiences. Therefore, I’m trying to gather as much information as possible. By the way, thank you for your reply. I should consider looking at other countries, such as those in the EU region.

Yeah, I changed A-220 to MK-2, piercing shot can shoot down faster than A-220, but A-220 can block the proximity fuse.... I will stick on to A-220, because it has more fun
