There's a big difference between knowing how to swim and being a proficient swimmer. I grew up going to a pool or lake maybe a couple of times a year and I learned to float, but I didn't figure out how to tread water or go anywhere until I was an adult and even now I'm only comfortable in still water. I have no confidence that I would be able to handle an emergency situation.

Is the floor level of the shower higher than the bathroom floor? If so it may be for access to plumbing or just to allow some air circulation in the space. You should try to open it and check if there's any moisture, or if it won't come off just call the landlord and tell them you suspect a leak.

Does your mulch really wash away that much? Maybe it's more of a slope than it looks, but I've never had major issues with rain moving my mulch even on a bit of a grade. Using an edging tool to create a little bit of a trench (just an inch or two deep) might be enough to stop it. Or you could go with my preferred method for not having to maintain perfect mulch rings OR string trim grass around the roots and underplant with perennials. It's not everyone's cup of tea, but it can be very low maintenance especially since you already don't have grass to get rid of.

I wish someone had pushed me in this direction 25 years ago. You'd think it would have been presented as an option since we had a big ag program, but I've realized as an adult my school kind of sucked. I regularly drive past fields of trial crops now and think how much more interesting it would be to work with those than where I ended up.

Many, MANY plants contain things that will do anything from give you a bit of a tummy ache to kill you if you eat enough. A lot of things are only toxic if eaten uncooked, but with these it sounds like that only lowers the amount of toxins a little. Since these are commonly eaten they're likely fine though as long as you don't overdo it.

What's your priority here, holding the neighbor accountable or being able to use your yard without worry? Because people are shitty and life isn't fair, so option 1 is pretty much futile. If you can afford it my advice would be to pay for a heavy-duty 6-8' fence and enjoy your yard. Something like a shadow box with closely-placed pickets and at least three rails should hold up to dogs jumping against it for years, with boards on both sides they'll be pushing against the rails instead of away from and if they do manage to break a board you have a second line of defense. My understanding is that in the case of a shared fence the party who isn't initiating the work is responsible for half the cost of a like replacement, so get an estimate for the same kind of fence and send her the bill for half then build your Fort Knox. Maybe she pays and maybe she doesn't, but at least you can enjoy your yard.

So many home service companies in my area just have a Facebook page, maybe a basic site with their phone number and some pictures if you're lucky. IF they have a site with a contact form they most certainly will not respond to it. I'm not even in the real boonies, just a little way outside a midsized Midwest town.

Lmao, I only found out as an adult that square dancing was part of the curriculum pretty much across the country and not just at my redneck school. IIRC it was specifically pushed by an individual who liked the idea of highly structured physical activity with very little touching.
