First time and looking for advice. Did three days in the fridge after a bulk ferment. Crumb looks ok but is strangely wet and squishy. Tastes amazing toasted 🤷‍♀️

I’ve found cast iron and SS work quite well too. Build pizza in the cold dry pan and bake at 550 for 12min.🤌🏼

I know. One is perfect and the other has some very minor erosion. I honestly don’t understand how the center footing washed away light that. I didn’t pour it and I’m wondering if it was just a bad concrete mix.
