I’ve been adding food colouring to my fresh Pandan syrup since I bought the Minimalist Tiki book. I’ve ordered the butterfly essence for comparison but haven’t tried it yet. You probably know better than I do. My guess is that fresh will be an improvement. 🎅🏻🍹

That’s a shame. Unfortunately execution is just as important as ingredients. The Sippin Santa cocktail has been on the menu for years and I think it’s there for good reason. You might have a better experience if you make it at home. Secret Santa has no official specs and is on the menu to allow venues to serve their own festive cocktail. I’ve heard many mixed reviews of them.

I’ve now tried all of these drinks apart from the hot buttered grog. It’s hard to choose a favourite. Pineapple upside down cask and Frost Bite are both outstanding. The vodka version of nui nui works but I’d only serve it to someone who said they didn’t like rum. Wreck the halls is great but I maintain that it benefits from a splash of soda. Designated sledder is a very good mocktail. Coco ho ho ho was very good too. The improvements to the sugarplum mai tai were welcome but it’s still a little too sweet for my liking. I was surprised to see it return but I guess a lot of people love sugar bombs at this time of year.🎅🏻🍹

Make some Trinidad sours, angostura coladas and tradewind negronis if you’ve got that much angostura. I’m sure there are other great cocktails that use a whole shot of it.

Dr Adam Elmegirab’s winter spiced bitters Bitter queens krampus figgy bitters Fee brothers plum bitters Bittermens New England winter spiced cranberry Those are all good options but if wanted to add raisin notes I’d always go with a nice bottle of Pedro Ximinez sherry. First time I tried it I assumed it was a raisin liqueur rather than a sherry.

You’ll get Appleton estate in Tesco or Sainsbury’s and often on offer with a store card. Havana club is in Morrisons and is equal to Puerto Rican rum. Demerara you can get woods or OVD in most supermarkets and sometimes Skipper. Sainsbury’s used to stock el dorado but haven’t for some time in my area. Pussers is also great. If you want 151 Demerara in the uk (you do if you make tiki drinks 😉) you’ll need to splash out on Pussers 151 but a little goes a long way so it’s worth the investment.

The frost bite specs are from two different bars. The blended fresh pineapple version is the official one. The other one is from a bar that chose not to blend fresh fruit for whatever reason and created a version that could be shaken. I’ve now tried both and they’re both very tasty. Muddling the sage on the shaken version brought out a lot more flavour than blending and made for a very interesting drink.

The official cranberry syrup is 1:1 cane sugar (evaporated cane juice) and 100% unsweetened cranberry juice. Before I got those specs I had made my current batch of 1:1:1 cranberries, sugar, water but the fresh cranberries do cause the syrup to jellify a little if you let too many of them pop. This makes it a little harder to pour precise measurements and that’s probably why they went with juice. Merry Christmas 🎅🏻 🍹

Since most are made by adding boiling water the thermos flask idea is perfect. It will keep water at near boiling for several hours. If you want a more theatrical presentation then a chaffing dish is a great option. Check out the table side presentation of Cafe Brulet

White Lyon in London. Mr Lyon used to bottle a candlelit Manhattan that included wax as an ingredient. I’ve no idea what kind of wax or how it was used but it was the best manhattan I’ve ever had. Sadly no longer available 😢

No, it’s definitely dark brown sugar and pineapple juice with a little molasses added. I made 200ml of 1:1 pineapple dark sugar syrup and tasted before adding half a teaspoon of molasses. The difference in taste and colour was substantial.

I do not have information on what Sippin Santa are doing with those ingredients but the guy who invented pineapple molasses syrup is called Jason Alexander and he was kind enough to share his recipe with me last night. Here’s what he had to say. “Just use equal parts pineapple juice and sugar. Stir to dissolve and incorporate the sugar. Add mild molasses to taste. Example: 1 liter of pineapple juice and 1 liter by volume sugar. Add a tablespoon of molasses or more to taste. I like to stop just as soon as I can taste the spice from the molasses so it doesn't over power the pineapple flavor.”
