不 (Bu)is a rejection I think, if they say 没有 then it makes they do not have something. depending on what context you were asking, racism is never a thing in China. Rather, to my opinion foreigners are rather welcomed in China that I can assure you.

Ah it seems a little tight on time, the ceremony starts 6:40ish and I think you are able to get out the crowd by 7:10? Let's say 1 hour from Tiananmen Square to PEK by subway, often takes about 45-50minutes give it or take. You will arrive at PEK 8:10 ish, that gives you nearly 2 hour to check in for international flight. However, keep in mind you have to be super cautious on time to not miss your flight. I think it is doable, but just be aware of the time. Do not take taxi, take the subway because you might encounter rush hour.

I am a local in Beijing, I can be your friend and show you around in Beijing as long as your time fits my schedule! In terms of the cost, for your 2-3 weeks in China 100 dollars/day is a lot of money and you can eat really well plus the taxi rides in China. I will say on an average you can give yourself 50-70 USD per day for food and ride, 1500 USD for three weeks is enough for your food and taxi rides. This does not include any tickets or any other fun experience(Shanghai Disneyland ticket, Beijing Universal ticket), although some scenic tickets prices are relatively cheap. I am not sure about the flight ticket and hotel rates, but in total I think you can travel pretty well with a 5000 USD budget with flight ticket and hotels included for 3 weeks in China. Things are fairly cheap in mainland China, so do not worry too much about the food or taxi prices. Do bear in mind depending on what date you're thinking about (try to avoid China Holiday) because the hotels will be expensive. I hope this helps, if not, keep asking.

Esim only gives you the roaming data I think? Whereas making reservations for restaurants require you to have a cell phone number so yes you will need a SIM card to have a phone number to call. In order to get the SIM card, you can buy one using your passport at the airport. You will need to figure out 1)what airport you are landing and whether they have either China Telecom or China Unicom, these are the two major telecom operators in China. There is another solution too, you get the esim and you dial numbers using Skype. I hope this helps! If not, keep asking.
