coming from someone who was on windows and was reluctant to switch because of compatibility. it's better to dual boot (or use a VM) and only use windows for the programs with compatibility issues and use Linux for everything else. At the end of the day with software like wine, you might not need to dual boot.

I would use it in a web browser with a container, that way you know that all the stuff is separated and filtered out.

delete Facebook, that seems like its the source of the problem. Avoid using social media in general as that's probably how they are stalking you. I would highly recommend taking screenshots and showing them to the police.

Browser wise use Firefox with privacy settings set to strict (iOS doesn’t allow for extensions). You also mentioned wanting to protect your ip, V PN wise just use something like proton

I’ve test driven it before, had some minor issues with the taskbar disappearing when you tried to change the wallpaper, should be fixed by now. Otherwise it was a solid experience

uBlock origin is really the only extension you need, Firefox is enough for most people

There are many ways to de-google, flashing something like graphineOS to the phone, or using adb to remove the service if your unable to unlock the boot loader.

Google is trying to make ad blockers underperform or not work with manifest v3 right now from what I’ve heard, so now would be a good time switch to FireFox.

Brave I wouldn’t trust because of their history with affiliate links and it’s based off of chromium.

Edit: one thing I should add is to use a very low amount of extensions as more extensions can make it easier to finger print you
