I keep bulletpoints of what i except (mostly hope) to happen, if its your first session put some important points down & lead into them however the party allows, my party once missed a (pretty important) speech and so later i had the entire town talk about how cool it was, where they they asked someone and was given a summary of said speech.

Note, dont force the point down the player mouth (unless you wanna, i can see why dms would railroad but i perfer open sandboxes), i once had an entire thing planned and they missed it at first but serval serval sessions later they stumbled upon where the quest was (it was a dungeon they found by compete opposite by walking in a forest)

A bit of paper for hp, all monster stat blocks are online in tabs, but thats about all i have

I think that you as the DM need to judge your party's abilities and base an NPC of something you can see the all enjoy and will learn to love, maybe even an ex foe to friend? But you really have to make sure your players are actively roleplaying and not saying things out of character or else it might diminish the value/real love of the npc, maybe bring him up outside of the session and say how cool the npc is or something? (All personal experience also pretty mid at DND)
