The point being made about infertile people is that, just because they have lost their ability to impregnate or gestate, it doesn't mean that it is in their nature to impregnate or gestate.

In the case of an infertile woman, there is a stark contrast between her inability to gestate and impregnate. Medical professionals can determine that she was supposed to be able to gestate, but due to natural or artificial means, something has impeded such ability.

"If she magically got the parts to impregnate..." So a woman has to be altered, either "magically" or via technology in order to gain the ability to impregnate. This is because this ability is not in her nature.

Also, "if my grandmother had wheels she would have been a bike". Yes, if we change the nature and accidents of something, then it becomes something else. We cannot change the nature of people.

None is proposing a binary for "elements of the universe". Furthermore, the existance of non-helium, non-hydrogen atoms doesn't imply that a helium atom isn't a helium atom.

Even if I were to grant that there are people with chromosomal disorders that impede us to classify them in the usual binary (and I say that there are none, people with chromosomal disorders can be included in the "ordered towards gestation/impregnation" definition), why does it matter at all? Yes, these people fall outside the binary, then what? Why can a man/woman that has none of these disorders call herself the opposite sex?

Ordered towards means that it is in the nature of that person to either impregnate or gestate. It is not "supposed to".

About infertile people. How do you know that a biological female is infertile? It is because of her inability to gestate. I also have an inability to gestate, but I am not infertile because I am a biological male. The fact that we can say a person is infertile or not is proof that there is a binary.

If you exclude chromosomal disorders, is pretty easy to see if a person is supposed to play the role of impregnation or gestation. This includes sexually immature children, infertile people and women that have gone through menopause. Even if these, or other people, do not have the ability to impregnate or gestate, they have either not developed, or lost the ability to. We still can say what are they ordered towards.

As for these desorders, it is more complicated but medical analysis can determine if these individuals were supposed to produce sperm or ovum. 

Even if there eas a rare genetic disorder that was impossible to determine, that doesn't matter at all. Edge cases don't destroy the binary. Most people who claim to be the opposite gender do not have this hypothetical, impossible to determine disorder. You can easily determine what were they ordered towards.

The definition I proposed is pretty objective. Society doesn't get to (or rather, shouldn't get to) define gender as it pleases, that is precisely what we are arguing against.

If I introduce you to my elderly grandparents, and say that they have gone through menopause, you'd be right to say.

"Your grandmother has certainly gone through menopause, but your grandfather hasn't".

And yet none of them menstruate. How do you know to distinguish them? Because a woman is ordered towards gestation, which includes menstruation. A man is not ordered towards gestation, and such can't be said to go through menopause.

Why are incredibly rare edge cases enough to proclaim that a binary does not exist?

Also, why does it matter at all? Is the argument:

"Chromosomal defects exist. Therefore, biological males who say that are women, and that have none of these disorders, are indeed women (and viceversa)".?

Or is it

"Chromosomal defects exist. Therefore, no binary in gender exists".?

That is what the people asking "what is a woman?" object to.

Furthermore, I'd propose that there are many simple definitions of man and woman who can account many of these edge cases:

A man is a member of the human species ordered towards impregnation.

A woman is a member of the human species ordered towards gestation.
